Spinach Quiche

Ingredients

  • 1/4 cup olive oil
  • 3 cloves chopped garlic
  • 1 chopped onion
  • 1 package chopped frozen spinach, thawed and drained
  • 1 4.5-oz. can drained mushrooms
  • 1 6-oz. package crumbled herb and garlic feta cheese
  • 1 8-oz. package shredded cheddar cheese
  • salt and pepper to taste
  • 4 beaten eggs
  • 1 cup milk
  • 1 prepared pie crust

Instructions

  1. Preheat oven to 375 F. or 190 degrees C.
  2. Melt butter over medium heat in medium skillet. Add garlic and onion and saute about 7 minutes until lightly browned.
  3. Stirl in mushrooms, spinach, feta cheese and 1/2 cup cheddar cheese. Add salt and pepper to taste.
  4. Spoon into pie crust.
  5. Whisk eggs and milk together in medium bowl. Add salt and pepper to taste. Pour into pastry shell to combine egg mixture and spinach mixture.
  6. Bake for 15 minutes. Sprinkle with the rest of the cheese and bake 35 to 40 minutes more, or until set.
  7. Allow to cool 10 minutes before serving.
