Some tips for making the best muffins:

  • Mix the wet into the dry ingredients only long enough to moisten them. The batter should be slightly lumpy. Over-stirring makes for tough muffins.
  • To keep fruit and nuts from sinking to the bottom of the muffin, dust them lightly with flour before mixing them in.
  • Fill your muffin tins no more than ¾ full to give them a nice rounded top. Overfilling tins gives you muffins with flat tops.
