Fish Veracruz

Ingredients

  • 1/4 cup olive oil
  • 1 chopped green pepper
  • 3 cloves minced garlic
  • 1/4 teaspoon white pepper
  • 1 teaspoon ground cinnamon
  • 1 juiced lime
  • 1/4 cup drained jalapeƱos
  • 3 chopped large tomatoes
  • 4 8-oz fish fillets

Instructions

  1. Preheat the oven to 350 degrees. Over medium high heat, heat the oil in a large skillet.
  2. Saute the green pepper, garlic, and onion about 5 minutes until soft. Add the white pepper, cinnamon, lime juice and chiles and blend for 2 minutes. Add the tomatoes and cook for 10 minutes or until thickened.
  3. Place the fish filets into a greased baking dish and top with the tomato sauce. Bake 15 minutes or until the fish flakes easily.
