Chili con Carne

Ingredients

  • 3 tablespoons olive oil
  • 1 chopped onion
  • 6 cloves garlic
  • 3 whole, peeled, chopped tomatoes
  • 32 ounces red kidney beans
  • 1 tablespoon chili powder
  • 2 teaspoons paprika
  • 1 teaspoon red pepper flakes
  • 10 ounces corn
  • 2 pounds organic, grass-fed ground beef

Instructions

  1. In a large pot over medium heat sauté the onion and garlic in olive oil until the onion becomes translucent. Add the ground beef and stir until browned.
  2. Add tomatoes, beans, chili powder, paprika and red pepper and stir. Add salt and pepper to taste. Reduce heat to low and simmer for 30 minutes.
  3. Mix in the corn and continue to cook another 15 minutes.
