Chili con Carne
Ground beef is the basis for this healthy chili recipe, and contrary to what a lot of people believe, it doesn't have to be bad for you. If it comes from organic, grass-fed beef, you can get the nutrition benefits of beef, such as protein, B-vitamins and minerals, but with far more of the good omega 3 fats, antioxidants, and fewer calories than conventionally raised beef.
High in both iron and vitamin C, these two vitamins work together so that the presence of one aids in the absorption of the other. And kidney beans provide lots of healthy fiber to help lower cholesterol levels and keep your digestion working at its best.
This healthy chili recipe can be made a day or two ahead of time, which helps the flavors to blend even more. Then just reheat and serve!

Ingredients
- 3 tablespoons olive oil
- 1 chopped onion
- 6 cloves garlic
- 3 whole, peeled, chopped tomatoes
- 32 ounces red kidney beans
- 1 tablespoon chili powder
- 2 teaspoons paprika
- 1 teaspoon red pepper flakes
- 10 ounces corn
- 2 pounds organic, grass-fed ground beef
Instructions
- In a large pot over medium heat sauté the onion and garlic in olive oil until the onion becomes translucent. Add the ground beef and stir until browned.
- Add tomatoes, beans, chili powder, paprika and red pepper and stir. Add salt and pepper to taste. Reduce heat to low and simmer for 30 minutes.
- Mix in the corn and continue to cook another 15 minutes.
