Herbed Lemon-Garlic Chicken
This is a healthy chicken recipe that takes very little time and effort to make, and uses ingredients you likely already have in your pantry. If you buy chicken in bulk you can freeze pieces in smaller packages, then for a last-minute meal defrost them by submerging them in a little warm water for about 20 minutes.
I particularly enjoy making this healthy chicken recipe when I have a cold, as the garlic and lemon helps soothe the throat and boosts the immune system. The garlic and hot pepper also creates a bit of heat, which is nice when you have the chills. Not only that, it tastes really good!
Be sure to add enough liquid that you get plenty of sauce to pour over the chicken. As it cooks the flavors strengthen a bit and the sauce is godd enough to be served over an accompanying dish such as noodles or mashed potatoes.

Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 6 cloves minced garlic
- 1 juiced lemon
- 1/2 cup white wine or chicken broth
- 1 tablespoon herbs de provence
- 1/4 teaspoon red pepper flakes
Instructions
- Heat the olive oil in a large cast iron skillet on medium-high heat and brown the chicken on both sides.
- Add the garlic and let it begin to brown, then add the lemon juice, white wine, herbs and red pepper flakes.
- Cover partially, reduce the heat to low and simmer for about 10 minutes, letting the liquids reduce slightly. Serve with pasta or mashed potatoes.
