Herbed Lemon-Garlic Chicken

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 6 cloves minced garlic
  • 1 juiced lemon
  • 1/2 cup white wine or chicken broth
  • 1 tablespoon herbs de provence
  • 1/4 teaspoon red pepper flakes

Instructions

  1.  Heat the olive oil in a large cast iron skillet on medium-high heat and brown the chicken on both sides. 
  2. Add the garlic and let it begin to brown, then add the lemon juice, white wine, herbs and red pepper flakes.
  3. Cover partially, reduce the heat to low and simmer for about 10 minutes, letting the liquids reduce slightly. Serve with pasta or mashed potatoes.
