Blueberry Oatmeal

Ingredients
- 1 1/3 cup water
- 1/8 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 teaspoons mild honey
- 2/3 cup rolled oats or oatmeal
- 1/3 cup blueberries
- 1/2 teaspoon grated orange zest
- 1/2 cup low-fat milk, soy milk, or almond beverage
Instructions
In a medium-size saucepan, boil the water. Add the cinnamon, salt, oatmeal, and honey. Lower heat and simmer for five minutes, uncovfered, or until the water is absorbed. Add the blueberries, zest, and milk. Simmer five minutes more or until creamy and until the blueberries have begun to burst. Cover and let sit for five minutes before serving.
