Apricot Canapés
Canapés make great healthy appetizer recipes. They are quickly and easily made, and are the perfect little tasty bite to serve to guests before dinner that won't spoil their appetite.This is a great recipe for kids to make too!
These canapés uses dried apricots as the base for the recipe. Not only do dried apricots pack a lot of flavor into a small bite, they contain a host of great nutrients as well. All apricots are naturally high in fiber and beta-carotene, but dried apricots possess even more potassium and iron than their fresh counterparts, by weight. The drying process concentrates the nutrients and makes them especially sweet.
Be sure to use naturally dried apricots, which are tend to be browner than their brilliant orange countrparts, which have been treated with sulfur dioxide gas during processing to increase their shelf life and preserve their bright color. Those with asthma can be particularly sensitive to sulfites, so best to avoid them.

Ingredients
- 16 dried apricots
- 8 teaspoons crumbled blue cheese
- 2 ounces shelled pistachios
- 1/2 teaspoon honey
- freshly ground pepper
Instructions
- On top of each apricot, place 1/2 teaspoon of the blue cheese.
- Sprinkle with pistachios and top with a few drops of honey.
- Add a touch of freshly ground black pepper.
