Apricot Glazed Pork Chops
Pork features in a number of cheap healthy recipes because it is one of the least expensive meats and is a good source of protein, iron, B-vitamins and zinc. A lean cut of pork, such as the loin, is low in saturated fat, containing even less fat than a chicken breast.

Apricot-Glazed Pork Chops

Ingredients
- 1 1/2 tablespoons worcestershire sauce
- 1/2 teaspoon chile paste
- 4 boneless pork chops
- 1 teaspoon ground ginger
- 1 pinch ground cinnamon
- salt and pepper to taste
- 2 tablespoons vegetable oil
- 1/2 cup white wine
- 1 cup apricot preserves
Instructions
- Mix the apricot preserves, Worcestershire sauce and chili paste in a small bowl.
- Rinse and pat dry the pork chops. Sprinkle with salt and pepper, cinnamon, and ginger.
- In a large skillet over medium-high heat, heat the oil. Sear the chops for 2 minutes on each side. Remove and set aside.
- Place wine in skillet and stir to scrape up any bits. Add apricot preserves mixture. Return chops to the skillet and coat with the sauce on both sides.
- Reduce heat to medium low and cook the chops for 8 minutes on each side or until done.
